Just nipping out…

Kindly readers! I leave you for the briefest of sabbaticals over the next fortnight. It is the end of term and I am so tired that I added orange juice to my coffee this morning and took a good thirty seconds to work out why it tasted so odd.

So I am going to the seaside to regain both my sleep pattern and my sanity. I shall return with posts on the cult of authenticity, modernism, and what baked goods have to do with Afrikaner nationalism.

Whose Heritage?

On 24 September, South Africans celebrate Heritage Day, during which they’re supposed to commemorate the rich and diverse cultural inheritance of the Rainbow Nation. That, at least, was the intention in 1996. Now, Heritage Day is a day of rallies and speeches organised by the government, or National Braai (Barbecue) Day – an initiative launched in 2007 to unite the nation in its shared enthusiasm for incinerating meat over wood fires.

Although there is something deeply ridiculous about a National Braai Day, there’s a logic in recasting Heritage Day into an uncomplicated, fun event which includes just about every South African. Not only did the then-Department of Arts, Culture, Science, and Technology include food as part of South Africa’s cultural heritage, but most South African cuisines include some form of barbecue. Everyone – from the middle classes in leafy suburbs, to township dwellers – can, and does, braai.

The originators of National Braai Day manage – probably unwittingly – to solve, or to negotiate, the deeply troubling question at the heart of Heritage Day: what on earth do we mean by ‘heritage’?

Like most historians, I find the idea of ‘heritage’ problematic – and particularly in societies, like South Africa, with long histories of nationalist politics. ‘Heritage’ is constructed: it’s what we – the state, and other institutions – select from the past, and what we choose to remember. Usually, we decide to remember those events and people who are useful for the construction of national identities. What we leave out of these narratives of national becoming is almost as important as what we decide to include.

Under apartheid, European explorers like Vasco da Gama, various early Dutch officials, Voortrekkers (pioneer farmers), Boer generals from the South African War, and nationalist politicians were immortalised on bank notes, in statues and monuments, and in thousands of street names. These white men – and some women – represented what the apartheid state defined as South Africa’s heritage – alongside events such as the Battle of Blood River, the songs in the FAK Sangbundel, volkspele (‘folk-games’), and some kinds of Afrikaans literature.

Those aspects of South African history which could not be mobilised in the construction of a narrative of the triumph of white, Afrikanerdom, were ignored. So there was no room for the miners’ strikes of the early decades of the twentieth century; the histories of the ‘hendsoppers’ and ‘joiners’ – Boers who surrendered to, or joined, the British army during the South African War; the implications of the 1913 Land Act for Africans; and the Bulhoek Massacre, for example.

Perhaps inevitably, the ANC has engaged in its own process of myth-making in post-apartheid South Africa, having claimed the 1976 Soweto uprising as its own event (in fact, the exiled ANC was completely taken by surprise by these student protests); interred Sara Baartman – a Khoi woman who toured Europe in various freak shows between 1810 and 1815, and who is now seen as an emblem of African suffering and exploitation under colonial rule – in a grave in the Eastern Cape, a region she probably never visited, but which is the heartland of the ANC; and has renamed airports, cities, and streets.

A couple of weeks ago I attended the annual Steve Biko Memorial Lecture at the University of Cape Town, presented this year by Ben Okri. Biko exemplifies what happens to difficult figures during processes of national myth-creation: as the originator of the Black Consciousness Movement and often critical of the ANC, Biko stands outside of the traditions, events, and movements which the ANC has used to create its version of a South African history. It’s telling that the ANC did not – to my knowledge – release a press statement on 12 September, the thirty-fifth anniversary of Biko’s death, and has done very little to transform him into a hero of the liberation struggle – as they’ve done with Sol Plaatje, for instance.

Although much of Okri’s speech was very, very bad – a woolly, rambling call for a national and nationalist renewal – I liked his opening point that we need to hold on to Biko’s ‘incisive’ questioning, and ‘forensic’ thought. It’s this kind of critical thinking which holds governments to account – particularly when they harness the past in the name of ‘heritage’ to prop up their claims to legitimacy.

One of the best examples of a thoughtful engagement with the pasts that we choose to remember is Jacob Dlamini’s Native Nostalgia (2009). In this memoir-cum-essay, Dlamini makes the – potentially uncomfortable – point that for all the viciousness of life in a township in apartheid South Africa during the 1970s and 1980s, black South Africans found ways of living – occasionally happily – under an oppressive regime.

He argues for remembering the strategies that people used to cope with the violence and discrimination of apartheid South Africa, suggesting that as we commemorate acts of resistance to the apartheid state, we should also remember the complex, ordinary lived experiences of the majority of South Africans.

As an historian and as someone who lived through the transition, I think that this is such an important point. Having been raised in a very politically aware household – both my parents were at various times engaged in anti-apartheid activities, and my mother was a Black Sash activist when I was little – I remember watching on television Nelson Mandela’s release from Victor Verster prison just a few kilometres from our house; shouting ‘vote yes!’ during the 1992 referendum; the riots after Chris Hani’s assassination in 1993; the bomb drills at school; frightening white men dressed in AWB uniforms driving through Paarl, where we lived until 1995 ; listening to radio announcers enumerating the numbers of people killed overnight in the Vaal Triangle, KwaZulu-Natal, and other flashpoints; and the alternating terror and euphoria of the 1994 election.

But it was when ordinary, everyday things began to change, that I realised the implications of the transition to democracy.

It’s difficult to describe the experience of being so isolated from the rest of the world as sanctions were introduced against South Africa during the 1970s and 1980s. As English-speaking opponents of apartheid, our family was doubly isolated – we didn’t have a large social circle in the small, conservative town where we lived.

One of the ways my parents coped with this isolation was through books and, particularly, magazines ordered from abroad. Our meals demonstrated particularly well how different we were from the conservative, white society around us, but also how isolated we were from the rest of the world. My mother cooked from Elizabeth David’s books, and also from Robert Carrier, the Supercook series, Good Housekeeping, and Katie Stewart’s recipes in Country Living. When my friends from school were eating lamb chops, rice, potatoes, and overcooked cabbage, we had paella, coq au vin, pasta in various forms, moussaka, and kofte. We drank proper coffee. We didn’t add Aromat to our food.

Making these dishes required some inventiveness: Arborio rice for risotto was almost impossible to find, and I can remember the first time I saw red peppers, mascarpone, ricotta, watercress, and couscous in the shops. My mother became adept at finding substitutes for the ingredients we couldn’t buy.

We have two thick recipe files at home – one for cakes and puddings, and the other for everything else. They comprise clippings from magazines and newspapers – Fairlady, the Financial Times – as well as recipes from friends, including my great-aunt’s amazing vinegar pudding, and, more recently, print-outs from blogs. Some of the recipes are older than I am, and we keep adding recipe cards, torn-out pages from magazines, and bits and pieces from the internet. These files – eccentrically categorised by my sister – are a record of my family’s experience of the past thirty or forty years: they’re a catalogue of our heritage.

They don’t, though, fit into the narratives of national becoming pedalled by the government and, even, the organisers of National Braai Day. What’s missing – among many things – in our Heritage Day celebrations is an acknowledgement of ordinary, lived experience under apartheid – of the multiple ways South Africans adjusted to living under an oppressive regime.

Gourmet Traveller

One of the perks of academia is being able to travel for research, study, and conferences. The odd side-effect of this is that academics become unwitting experts in the quality of travel food – by which I mean the meals available in airports and railway stations and on planes and trains.

I’ve never really understood the griping about airline meals: they’re certainly not the most inspired dinners and, particularly, breakfasts I’ve ever eaten – and I’ve probably drunk the worst coffee in the world while on long-haul flights between Cape Town and London – but I haven’t ever had anything that was actively offensive.

In fact, I rather liked the lamb biryani with cashew nuts and caramelised bits of onion I ate on a flight from Qatar to Joburg, and the macadamia and honey ice cream I had while flying from Perth to Melbourne. I’ve had considerably worse food on trains. On a nine-hour journey between Montrose in northern Scotland and London, the dining car was closed because the tea urn was broken. Which, although an interesting commentary on the centrality of tea to the British diet, was nevertheless unpleasant. A woman can subsist on crisps for only so long.

I wonder why there’s so much complaining about airline food. I think it has something to do with the overall unpleasantness of economy-class flying – the cramped seats, the mucky loos, and the dismaying misfortune of being stuck beside fellow passengers with strange personal habits – but it’s also connected, to some extent, with the ways in which we understand travel.

I’ve just returned from a month in Australia – it was amazing – and became particularly aware of how much I spend on food when I travel because it’s probably the most expensive country I’ve ever visited. But I still went out of my way to eat friands and Anzac cookies and to drink fantastic coffee to try to understand the cities I visited in Australia.

There are few non-fiction genres which blur so easily into each other as food and travel writing – as attested by the continuing popularity of magazines like the Australian Gourmet Traveller, and the legion of food-and-travel cookery books and blogs. The best food writing is a kind of inadvertent travel writing. Claudia Roden’s writing on the Middle East and North Africa, Fuchsia Dunlop on China, Madhur Jaffrey on India, and, to a lesser extent, Elizabeth David’s writing on France, are as much introductions to these countries and regions at particular moments in time, as they are recipe books.

And it’s striking how much travel writing focusses on food. One of the most memorable sections of Robert Byron’s The Road to Oxiana (1937) – by far my favourite travel narrative ever – features a blue porcelain bowl of chicken mayonnaise.

It was in Isfahan I decided sandwiches were insupportable, and bought a blue bowl, which Ali Asgar used to fill with chicken mayonnaise before starting on a journey. Today there had been treachery in the Gastrell’s kitchen, and it was filled with mutton. Worse than that, we have run out of wine.

Later, stranded in the middle of the night and in the freezing cold on the road between Herat and Murghab, Byron and his travelling companions take refuge in a makeshift tent after their car breaks down:

Quilts and sheep-skins replaced our mud-soaked clothes. The hurricane lantern, suspended from a strut in the hood, cast an appropriate glow on our dinner of cold lamb and tomato ketchup out of the blue bowl, eggs, bread, cake, and hot tea. Afterwards we settled into our corners with two Charlie Chan detective stories.

Byron uses food to suggest his and his companions’ feelings at particular moments of the journey. Relieved to have reached Maimana – now on the Afghan border with Turkmenistan – he and Christopher Sykes are treated to a feast:

The Governor of Maimena was away at Andkhoi, but his deputy, after refreshing us with tea, Russian sweets, pistachios, and almonds, led us to a caravanserai off the main bazaar, a Tuscan-looking old place surrounded by wooden arches, where we have a room each, as many carpets as we want, copper basins to wash in, and a bearded factotum in high-heeled top-boots who laid down his rifle to help with the cooking.

It will be a special dinner. A sense of well-being has come over us in this land of plenty. Basins of milk, pilau with raisins, skewered kabob well salted and peppered, plum jam, and some new bread have already arrived from the bazaar; to which we have added treats of our own, patent soup, tomato ketchup, prunes in gin, chocolate, and Ovaltine. The whisky is lasting out well.

Byron is less interested in what the people around him are eating, than in how food reflects his experiences of his journey through the Middle East and Central Asia. Writing in 1980, in an essay included in the collection What am I doing here, Bruce Chatwin uses food to emphasise his sense of what was lost – culturally, socially – during the communist revolution in Afghanistan:

And we shall lose the tastes – the hot, coarse, bitter bread; the green tea flavoured with cardamoms; the grapes we cooled in the snow-melt; and the nuts and dried mulberries we munched for altitude sickness.

His elegy for Afghanistan is problematic on so many levels – his deliberate misunderstanding of Afghan politics, his romanticising of pre-1960s Afghanistan, and Chatwin’s own dubious reputation for factual accuracy – but it’s an evocative piece of writing which conjures up what feels like a realistic and layered portrayal of the regions of Afghanistan which Chatwin visited.

Describing food is absolutely integral to this: unlike foreign religious ceremonies or social customs, we can all sample – or imagine sampling – the cuisines of other societies. Food allows us some purchase on ways of living which are unfamiliar to us: we can use food to try to understand a different society, and also to judge it.

In her account of a journey through parts of West Africa in the mid-1890s, Mary Kingsley used food – this time cannibalism – to explain the what she perceived to be the ‘backwardness’ of Fang society:

It is always highly interesting to observe the germ of any of our own institutions existing in the culture of a lower race.  Nevertheless it is trying to be hauled out of one’s sleep in the middle of the night, and plunged into this study.  Evidently this was a trace of an early form of the Bankruptcy Court; the court which clears a man of his debt, being here represented by the knife and the cooking pot; the whitewashing, as I believe it is termed with us, also shows, only it is not the debtor who is whitewashed, but the creditors doing themselves over with white clay to celebrate the removal of their enemy from his sphere of meretricious activity.  This inversion may arise from the fact that whitewashing a creditor who was about to be cooked would be unwise, as the stuff would boil off the bits and spoil the gravy.  There is always some fragment of sound sense underlying African institutions.

Uncivilised – in this case, taboo-breaking – food and eating habits suggest an uncivilised society.

When I was in Perth, I dropped into the fantastic New Edition bookshop in William Street. Having taken photographs of the incredible mural which covers the shop’s back wall, I was afflicted with guilt – and also the same desperate desire that I feel in most independent bookshops for it to survive and flourish (which makes visiting independent bookshops needlessly stressful) – so I bought a book: a small, light collection of Italo Calvino’s essays, Under the Jaguar Sun (1983).

The three essays which comprise the collection are the germ of a longer book which Calvino had planned to write on the five senses. He completed only these three before his death, and the titular essay, happily, focuses on the sensation of taste. It’s about a couple who visit Oaxaca in Mexico. Their interest in the country’s cuisine becomes, gradually, the purpose of the holiday itself:

From one locality to the next the gastronomic lexicon varied, always offering new terms to be recorded and new sensations to be defined. …we found guacamole, to be scooped up with crisp tortillas that snap into many shards and dip like spoons into the thick cream (the fat softness of the aguacate – the Mexican national fruit, known to the rest of the world under the distorted name of ‘avocado’ – is accompanied and underlined by the angular dryness of the tortilla, which, for its part, can have many flavours, pretending to have none); then guajote con mole pablano – that is, turkey with Puebla-style mole sauce, one of the noblest among the many moles, and most laborious (the preparation never takes less than two days), and most complicated, because it requires several different varieties of chile, as well as garlic, onion, cinnamon, cloves, pepper, cumin, coriander, and sesame, almonds, raisins, and peanuts, with a touch of chocolate; and finally quesadillas (another kind of tortilla, really, for which cheese is incorporated in the dough, garnished with ground meat and refried beans).

This obsession with the country’s food coincides, unexpectedly, with their shared enthusiasm for Mexico’s Pre-Columbian past. After a visit to a ‘complex of ruins’ in Monte Albán, where their guide implies that the losers of a ballgame played at one of the ruined temples were not only ritually slaughtered, but also eaten by the temple’s priests and the victorious team, Olivia, the narrator’s partner, becomes preoccupied with discovering how these human remains were prepared. The story implies that her desire to eat ever-more exotic Mexican dishes stems from her belief – never articulated – that some remnant of these cannibalistic feasts must exist within contemporary Mexican cooking.

The narrator reflects:

the true journey, as the introjection of an ‘outside’ different from our normal one, implies a complete change of nutrition, a digesting of the visited country – its fauna and flora and its culture (not only the different culinary practices and condiments but the different implements used to grind the flour or stir the pot) – making it pass between the lips and down the oesophagus. This is the only kind of travel that has a meaning nowadays, when everything visible you can see on television without rising from your easy chair.

For Olivia, eating becomes a way, literally, to imbibe the culture, politics, and history of Mexico. If she can’t be Mexican, then she can, physically, become closer to Mexico – its land and people – itself.

I don’t, obviously, advocate cannibalism as part of the average tourist itinerary – it’s illegal in most countries, for one thing – but I think that this idea of ‘eating’ a country is a useful way of exploring how we use food to construct national identities.

In some ways, food stands in for a society: we eat piles of pancakes with bacon and maple syrup in the United States as a way of engaging with what many believe to be an excessive, consumerist society. Travellers who think of themselves as being in pursuit of the ‘real’ – unpredictable, utterly unfamiliar, occasionally dangerous – India eat the delicious, yet potentially diarrhoea-inducing, street food of country: eating the more familiar offerings at hotels signifies a failure to leave the tourist bubble. Since the 1940s and 1950s, France has promoted its cuisine as a symbol of its national culture. (Something which Charles de Gaulle may have been thinking about when he wondered how he would govern nation that has two hundred and forty-six different kinds of cheese.) French food is sophisticated, so French society is sophisticated.

There are grains of truth in all these stereotypes, but they remain that – simplified and often clichéd understandings of complex societies. They are also, largely, not a real reflection of how most people eat: they exclude the ingredients bought at supermarkets, and the meals eaten at fast food joints. So if we want, truly, to understand countries and societies through their food, we have to be willing to eat that which is, potentially, less interesting and, perhaps, less enticing, than the exotic meals described in travel books.

It Sticks in the Throat

Disclaimer: this post concerns the organisers of next weekend’s Toffie Food Festival and Conference. At the beginning of July, I noticed that they were beginning work on a food magazine and contacted them about writing for it. We had a brief, yet friendly, correspondence which ended when I realised that I wouldn’t be able to afford the R1500 (about £150) ticket for the Festival. (I see that they’re now selling day tickets to the exhibition and market for R50 each, which is excellent.) So please believe me when I say that this post isn’t a case of sour grapes. Also, it contains some swearing.

This week’s post was supposed to be about food, eating, and ideas around ‘authenticity’ – inspired by an article from Prospect about the end of postmodernism – but I find myself suddenly enraged and can’t think about anything else. This month’s Woolworth’s Taste magazine comes with a free copy of Menu: a publication which accompanies next weekend’s Toffie Food Festival and Conference in central Cape Town.

Menu lists Cape Town’s 167 best dishes, and includes short essays on a range of subjects: interviews with local restaurateurs, aspects of southern African cuisine, and the inevitable peon to Elizabeth David. It begins relatively uncontroversially with the usual range of comments of shopping malls having killed our ‘food culture’ and the need to encourage an interest in local cuisines. I’m annoyed by the ignorant, rose-tinted view of the past which informs this kind of thinking, but there’s nothing fundamentally wrong about a desire to improve the way people eat. No, my problem is with this:

This issue of Menu magazine compiles some of the best food experiences in the city. The visuals show food dropped on floors at home and in the street, because the best pizza always lands on the floor.

Yes, I know: ‘the best pizza always lands on the floor.’

I’ll wait while you compose yourself.

And so each of the photographs in the magazine depicts food – blobs of ice cream, crisps, bread, salad, and barbequed chicken – dropped on the ground in Cape Town.

A magazine dedicated to promoting the best restaurants in Cape Town, to disseminating information about food in South Africa, and, presumably, to encouraging its readers to eat better – a magazine produced in the midst of a global food crisis where people are starving to death and overthrowing their governments because of a lack of food – includes photographs of wasted food.

This magazine draws attention to the fact that it wasted food in order to create pretty pictures. Seriously?

ARE YOU OUT OF YOUR FUCKING MINDS? How was this ever supposed to be a good idea?

Aside from the pretentiousness of the writing and the silliness of the concept, it’s absolutely appalling to promote an awareness of eating good food by throwing it away. I do realise (and hope) that relatively small amounts of food were wasted during the photo shoots, but this isn’t really the point. The magazine seems to suggest that there’s something poetic – or, rather, given its overriding aesthetic, hip – to waste food.

Did you know that we waste a third of our food supply? According to a report published in May by the UN Food and Agriculture Organisation, roughly 1.3 billion tonnes of the world’s food – food produced for human consumption and which is perfectly good to eat – is wasted or lost. In poor nations, this waste is usually the result of poor infrastructure, where inadequate storage, processing, or packaging facilities fail to keep food fresh and uncontaminated. But in wealthy countries, food waste – and industrialised and developing nations waste roughly the same amount of food (about 670 and 630 million tonnes respectively) – is produced by ordinary people.

The average consumer in the West wastes 95 to 115kg of food every year, most of it fruit and vegetables. In sub-Saharan Africa, south Asia, and southeast Asia – the least developed parts of the world, in others words – this amounts to an average of only 6-11kg of food. People who are poor tend to buy less food and will ensure that they throw away as little of it as possible.

And the proportion of food wasted by Westerners has only increased over the past few decades. Tristram Stuart writes in Waste: Uncovering the Global Food Scandal (2009):

A survey in Britain during the 1930s found that household food waste comprised only 2-3 per cent of the calorific value of food that entered the home. In 1976 waste was apparently only 4-6 per cent, and similar studies in America during the 1960s and 70s found wastage levels of about 7 per cent.

We are now at a stage where rich countries waste 222 million tonnes of food per year – which is only slightly less than the annual food production of sub-Saharan Africa (230 million tonnes).

At a time when demand for food is only increasing, it’s ludicrous that so much food goes to waste. As the FAO’s report notes, one of the most effective ways of reducing

tensions between the necessary increase in consumption [of food] and the challenging increase in production, is to also promote food loss reduction which alone has a considerable potential to increase the efficiency of the whole food chain. In a world with limited natural resources (land, water, energy, fertilizer), and where cost-effective solutions are to be found to produce enough safe and nutritious food for all, reducing food losses should not be a forgotten priority.

So what are the implications of throwing away so much food? It means that the limited amount of land available for agriculture is being exploited needlessly. It means that the greenhouse gasses emitted during the production, processing, and transportation of food are done so in vain.

We know that hunger and starvation are not necessarily caused by a lack of food, but, rather, by people’s inability to access it. Drought – increasingly the product of climate change – and food speculation all cause the price of food to increase. Wasting food also contributes to this. As a recent study suggests, there is a strong link between this year’s increased incidence in political violence in the Arab world and sub-Saharan Africa and high food prices.

The FAO makes a number of suggestions of how we can reduce waste, and one of them is encouraging Westerners and members of the middle classes in developing nations not to waste food.

These are people who can afford to throw food away. And these are the people who read Menu magazine. The problem with including a celebration of dropped and wasted food is that it indicates a profoundly problematic attitude towards food. Stuart explains:

Throughout the developed world, food is treated as a disposable commodity, disconnected from the social and environmental impact of its production. Most people would not willingly consign tracts of Amazon rainforest to destruction – and yet that is happening every day.

Even if the authors of Menu mean well, their magazine seems to forget that food is not another consumer product like designer clothes or jewellery to be artfully arranged and photographed.

If they really do want to change they ways in which we eat, it’s not enough just to encourage people to eat local cuisines and buy their meat from independent butchers. Not only do we need to throw away less of our food, but we must understand the ecological, social, and even political implications of what we choose to eat – and throw away. The decision to waste food in the name of cool sticks in the throat.

Waste

The only vaguely British royal-themed food I’ve eaten was sorely disappointing mock turtle soup (at an Oxford College – where else?) and coronation chicken. I wanted to write something about coronation chicken this week: it’s one of those dishes which say a great deal about a country’s attitudes towards food – and the relationship between these attitudes and national identities – as a particular moment in time.

This salad of cold chicken in a curried mayonnaise was invented by Rosemary Hume – the business partner of the more famous Constance Spry of the eponymous recipe book – to commemorate the coronation of Elizabeth II in 1953. (Originally it was called poulet reine Elizabeth.) Before I continue, this is the original recipe:

Coronation Chicken (serves 6-8)

2 young roasting chickens

water and a little wine to cover

carrot

a bouquet garni

salt

3-4 peppercorns

cream of curry sauce (see below)

Poach the chickens, with carrot, bouquet, salt, and peppercorns, in water and a little wine, enough barely to cover, for about 40 minutes or until tender. Allow to cool in the liquid. Joint the birds, remove the bones with care. Prepare the sauce given below. Mix the chicken and the sauce together, arrange on a dish, coat with the extra sauce.

Cream of curry sauce

1 tablespoon oil

2 oz. onion, finely chopped

1 dessertspoon curry-powder

1 good teaspoon tomato puree

1 wineglass red wine

¾ wineglass water

a bay-leaf

salt, sugar, a touch of pepper

a slice or two of lemon and a squeeze of lemon juice

1-2 tablespoons apricot puree

¾ pint mayonnaise

2-3 tablespoons lightly whipped cream

Heat the oil, add onion, cook gently 3-4 minutes, add curry-powder. Cook again 1-2 minutes. Add puree, wine, water, and bay-leaf. Bring to boil, add salt, sugar to taste, pepper, and the lemon and lemon juice. Simmer with the pan uncovered 5-10 minutes. Strain to cool. Add by degrees to the mayonnaise with the apricot puree to taste. Adjust seasoning, adding a little more lemon juice if necessary. Finish with the whipped cream. Take a small amount of sauce (enough to coat the chicken) and mix with a little extra cream and seasoning.

As any good English graduate will quote to you, the world is a text. In other words, any thing – any book, chair, poem, song, garden, hat, or film – can be read as a ‘text’: as a collection of signs, or symbols, which, according to material and historical context, will mean a variety of things. So a washing machine manufactured in the 1950s and bought by a white, middle-class family in Pinelands (a Cape Town suburb built along the lines of a ‘garden city‘) is not only a washing machine: it’s indicative of the impact of wartime innovations in technology on households; of rising post-war middle-class affluence; of the association of race and class in apartheid South Africa; of the slow move of women out of the home and into the workplace; but also of the reaction against women working and the social conservatism of the 1950s.

In this way, a recipe is a text like any other, and a particularly rich source for social, cultural, and economic history. Coronation chicken is interesting for a number of reasons. Firstly, it’s a dish designed to be eaten with one, fork-clutching hand. This is food that can be eaten in front of the television – and Elizabeth II’s coronation was a landmark in television history. Secondly, its inclusion of mayonnaise – something which still needed to be made by hand during the 1950s – nods to the massive influence of French cordon bleu cuisine on British cooking until, at least, the 1960s. Elizabeth David’s enthusiasm for the bourgeois cooking of Provence and other regions had yet to make an impact. In books like The Constance Spry Cookery Book, cordon bleu remained the standard for all forms of cooking.

And then there’s the curry powder. Although the Victorians and Edwardians embraced Anglicised versions of some Indian dishes – kedgeree and curry, most famously – it was only after independence in 1948 that Indian food became more widely available and popular in Britain. Admittedly, these Indian restaurants served a range of dishes which had been adapted to British tastes – they had thicker, richer gravies and were usually less spicy – but their growing popularity pointed to the fact that in post-austerity Britain, the population was enthusiastic to try exotic new flavours, if only in moderation (coronation chicken has only two teaspoons of curry powder). Indeed, the idea of curry powder is a foreign one: in India, any blend of spices is called garam masala and will vary from shop to shop, or household to household. What we call ‘curry powder’ is a mix of spices chosen by food companies. The curry powder which I use – Rajah (owned by Unilever) – contains, according to the box, cumin, coriander, and turmeric along with other spices.

As tastes have become more sophisticated, so have interpretations of coronation chicken. In a recent article in which she reworks the dish, Felicity Cloake makes the point that it’s been subject to a range of changes: curry powder has been replaced with freshly roasted and ground cumin and coriander (although in her recipe she keeps shop-bought curry powder for its retro quality); yogurt and chutney have taken the place of cream and of apricot and tomato puree; and fruit and nuts have made welcome appearances.

Possibly the greatest difference between coronation chicken prepared in 2011 and that which was made in 1953 is that cooks in the 1950s would have been more likely to use leftovers. The dish was designed purposefully to dress up potentially unappetising leftover food. Even if the original recipe included instructions for poaching chickens, the curried mayonnaise complements leftover roast chicken just as well. The accompaniment which Spry and Hume suggest also uses leftovers: a cold, dressed rice and cucumber salad.

When I was leafing through my mother’s elderly copy of the Constance Spry Cookery Book (1956) – it belonged originally to a great-aunt – I read the introduction for the first time, and was struck by the way in which Spry linked the purpose of the recipe book – providing home cooks with clear, well-written good, delicious recipes – with its post-war social and economic context. Listing the changes in attitude towards food and cooking since the late 1940s, she adds:

Something else is new too: the immensely better and fairer distribution of food among all grades of society. This is due to a variety of causes, not the least of which was the rationing system at which we grumbled so incessantly and to which we so thankfully said good-bye. Remembering as I do the days of immensely long, boring, wasteful dinners, remembering too the starvation which was all too often at our very doors, I cannot forbear to remind you how much respect ought to be paid to food, how carefully it should be treated, how shameful waste is.

I think that the greatest achievement of Lord Woolton’s tenure as Britain’s Minister of Food during the Second World War was the way in which he not only eked out the nation’s food supply, but that he ensured that most Britons ate well. Food rationing was introduced on 8 January 1940 and at first included only butter (4 oz per person per week), sugar (12 oz), raw bacon or ham (4 oz), cooked bacon or ham (3.5 oz), and eggs (2). Meat rationing began in March that year, and, gradually, tea, jam, and cheese were also rationed. During the war, bread, potatoes, coffee, fruit, vegetables, and fish were not rationed, although supplies of these were very limited.

Food rationing did not end with the war: it continued until 1953. Bread was rationed for the first time between 1946 and 1948, and potatoes in 1947. In the same year, the fruit and alcohol for Princess Elizabeth and Philip Mountbatten’s wedding cake was donated by Girl Guides in Australia, South Africa, and Jamaica because of the strictness of the rationing system.

A combination of increased exercise and a limited diet relatively low in saturated fat and sugar meant that the health of the British population actually improved during and after the war. In fact, many Britons ate considerably better during the war than before: improved distribution and a relatively standardised diet meant that those who had been too poor – or even too ignorant – to eat well before 1939 now received regular, healthy meals. George Orwell’s description of working-class meals in Wigan during the 1930s is particularly evocative:

The miner’s family spend only tenpence a week on green vegetables and tenpence half-penny on milk (remember that one of them is a child less  than three years old), and nothing on fruit; but they spend one and nine on sugar (about eight pounds of sugar, that is) and a shilling on tea. The half-crown spent on meat might represent a small joint and the materials for a stew; probably as often as not it would represent four or five tins of bully beef. The basis of their diet, therefore, is white bread and margarine, corned beef, sugared tea, and potatoes – an appalling diet.

Compare this to the Woolton Pie recommended by the Ministry of Food as a nutritious and thrifty (if not necessarily tasty) way of feeding a family:

Take 1Ib each of diced potatoes, cauliflower, swedes and carrots, three or four spring onions – if possible, one teaspoonful of vegetable extract, and one tablespoonful of oatmeal. Cook all together for 10 minutes with just enough water to cover. Stir occasionally to prevent the mixture from sticking. Allow to cool; put into a pie dish, sprinkle with chopped parsley, and cover with a crust of potatoes or wheatmeal pastry. Bake in a moderate oven until the pastry is nicely brown and serve hot with brown gravy.

This wouldn’t have made a particularly delicious supper, but it was much healthier and more filling than sweet tea and white bread with margarine. Again, this recipe made the best of leftovers and scraps. There’s a famous wartime propaganda poster which exhorts Britons to not waste food: ‘Better pot-luck with Churchill today than humble pie under Hitler tomorrow’.

Given the success of rationing in Britain, it’s not really surprising that so many green groups have suggested that it serves as an excellent model for limiting carbon emissions and the use of fossil fuels. It’s even been argued that a return to a wartime diet would reduce the numbers of overweight and obese children in Britain. Although I think that these are creative and useful ideas, I’m concerned that they’re based partly on an idealised notion of life on the home front: that they don’t take into account the drudgery of cooking with such a limited range of ingredients (and how boring the food was); and the fact that many people did their utmost to get around rationing by growing their own food (good idea) and trading on the black market (not so good).

It’s particularly telling that the habits taught by rationing did not outlast the war. As Orwell made the point, low pay was only one reason why poor families in Wigan ate badly:

When you are unemployed, which is to say when you are underfed, harassed, bored, and miserable, you don’t want to eat dull wholesome food. You want something a little bit ‘tasty’. There is always some cheaply pleasant thing to tempt you. Let’s have three pennorth of chips! Run out and buy us a twopenny ice-cream! Put the kettle on and we’ll all have a nice cup of tea! … White bread-and-marg and sugared tea don’t nourish you to any extent, but they are nicer (at least most people think so) than brown bread-and-dripping and cold water.

I’m not sure that rationing will fundamentally alter people’s attitudes towards food and eating, but there are other lessons to be learned, and chiefly around controlling waste. In Waste: Uncovering the Global Food Scandal (2009), Tristram Stuart makes the point that in the United States and Europe, about half of all edible, safe food is thrown away. This is done mainly by supermarkets and food manufacturers, but households contribute as well. There’s no single way of reducing food waste – changing legislation on ‘sell-by’ and ‘use-by’ dates would be a start – but one strategy would be to encourage people to think more carefully about how they buy food: teach them that ‘buy one get one free’ specials tend to encourage waste, for example, and make the point that wasted food is, essentially, wasted money.

And this isn’t a totally unrealistic goal. After all, not very long ago, British households threw away much less food: 2-3 per cent during the 1930s, and 4-6 per cent two decades later. Moreover, Japan, Taiwan, and South Korea all have successful programmes which have reduced the amount of food waste. The latter two have made it illegal for food to go to landfill, and all three have educated the public about the importance not only of throwing away as little food as possible, but of composting or recycling that which absolutely has to go. South Korea transforms its food waste into pigswill (something banned in Britain after the outbreak of mad cow disease). Stuart writes:

Koreans obey the waste recycling law largely because they have resigned themselves to the reality: that sending food into landfill is against their own interests and that of the planet they live in. They know about the disease outbreak in Britain, and they know about the ban on swill-feeding – and they conclude, as a result, that Europeans are blithely continuing their reckless, self-interested exploitation of the planet in the manner that has characterised them for centuries.

You wouldn’t throw money away – so why do the same with food?

Be Modern: Worship Food?

On Monday evening I watched the first episode of the latest series of Australian MasterChef to be broadcast in South Africa. The previous series was so wildly popular here that I was interested to see what the fuss was about. Based on the latest incarnation of the MasterChef franchise in the UK, over the course of a few weeks the programme whittles down a group of fifty aspiring cooks to a four or five finalists who are put through a series of challenges – working a shift in a hotel kitchen, recreating a chef’s impossibly complicated signature dish (I hate the term) – until only one contestant emerges triumphant. It’s fun, self-important, and utterly ridiculous.

And then, towards the end of this first episode of season two, an audience of at least sixty intelligent adults applauded a pavlova.

A pudding consisting of egg whites, sugar, vinegar, and vanilla received a round of applause. I mean, I lecture three times a week and I’m never applauded.

I love pavlova and the MasterChef version – baked and unveiled by Donna Hay – looked fantastic, and I really don’t have much against reality TV shows (I can’t – I was once badly addicted to the second series of My Restaurant Rules.) And, to be fair, to accuse MasterChef of not being adequately realistic would be to miss the point. The British version is hosted and judged by two middle-aged men who yell things like ‘Cooking doesn’t get tougher than this!’ at the camera. It’s a competition and no attempt to train a new generation of chefs. But the round of applause and the reverence for a pudding struck me as being more than silly. It was, in fact, too serious.

MasterChef is like many other reality shows: it judges contestants on their ability at a particular skill. This skill can be anything – from fashion design to hairdressing – because it’s secondary to the format of the programme. It’s the vehicle for television series which are, essentially, talent shows, but on a more elaborate and glamorous scale. The adulation of the pavlova undermined this format. All of a sudden, the focus of that episode of MasterChef shifted from the contestants to the food.

Am I overreacting? Probably. But not without reason. Earlier that day I had read an article written by Angela Carter in 1984 for the London Review of Books, in which she reviewed The Official Foodie Handbook by Ann Barr and Paul Levy, Elizabeth David’s An Omelette and a Glass of Wine, and Alice Waters’s Chez Panisse Menu Cookbook. While she acknowledged that the Foodie Handbook was meant to lampoon middle-class ‘foodies’, it is was one of a series of guides – like the Sloan Ranger and Yuppie handbooks – to middle-class living which, she felt, walked an uneasy line between guide and satire. Writing about the Preppy Handbook she noted:

The book was an ill-disguised celebration of the snobbery it affected to mock and, under its thinly ironic surface, was nothing more nor less than an etiquette manual for a class newly emergent under Reaganomics. It instructed the nouveaux riches in the habits and manners of the vieux riches so that they could pass undetected amongst them. It sold like hot cakes.

Along with David and Waters, the authors of the Foodie Handbook elevate the preparation and eating of food to a rarefied art form only done ‘properly’ by those educated and sensitive enough truly to understand cooking. The book advised its readership: ‘Be modern: worship food!’ Carter was, like Jay Rayner and Anthony Bourdain, particularly scathing of Alice Waters:

Alice Waters [serves] a Franco-Californian cuisine of almost ludicrous refinement, in which the simplest item is turned into an object of mystification. A ripe melon, for example, is sought for as if it were a piece of the True Cross. Ms Waters applauds herself on serving one. ‘Anyone could have chosen a perfect melon, but unfortunately most people don’t take the time or make an effort to choose carefully and understand what that potentially sublime fruit should be.’ She talks as if selecting a melon were an existential choice of a kind to leave Jean-Paul Sartre stumped.

She concludes, gloriously:

Ms Waters has clearly lost her marbles through too great a concern with grub, so much so that occasionally ‘Alice Waters’ sounds like a pseudonym for S.J. Perelman. ‘I do think best while holding a tomato or a leg of lamb,’ she confides. For a person of my generation, there is also the teasing question: could she be the Alice, and ‘Chez Panisse’ the real Alice’s Restaurant, of the song by Arlo Guthrie? And if this is so, what does it prove?

Carter bases much of her criticism of the Foodie Handbook, Waters, and Elizabeth David on the grounds of insensitivity: how is it possible to be so precious about food, she asks, when so many people go without? I agree that there is something profoundly wrong with a world where some populations have so much food that they feel that they should spend a day searching for the perfect watermelon, while others starve or are reliant on the tender mercies of aid organisations.

We have, though, always imbued food with meaning. Food provides nourishment, but it also carries with it a range of assumptions, symbols, and signs which are occasionally as important as its primary function. When Spanish missionaries in sixteenth-century Mexico refused to celebrate communion using maize, instead of wheat, wafers, they did so purely on the grounds that wheat, an imported crop, represented Europe and, thus, civilisation. Similarly, when well-meaning lady food reformers attempted to ‘Americanise’ the cuisine of recent immigrants to the United States during the 1920s, they did so because the cooking of Italy, Poland, and Ireland was seen as less ‘civilised’ than that prepared by white, Protestant Americans.

There is a difference, though, between the association of food with civilisation and cultural superiority and giving a round of applause to a pavlova – or, indeed, to a melon. In Imperial Leather: Race, Gender, and Sexuality in the Colonial Context (1995), Anne McClintock examines the ways in which Victorian advertisers used images of empire to sell their products. Pears, the soap manufacturers, produced a series of advertisements which implied that soap was somehow connected to the success of British imperialism. In one of their best known ads from the early 1890s, a sea captain – surrounded by images of travel and conquest – is depicted washing his hands in his ship. It’s captioned: ‘The first step towards lightening the white man’s burden is through teaching the virtues of cleanliness.’ Another titled ‘The Birth of Civilisation’ is of an African man holding aloft a bar of soap which has floated ashore after a shipwreck.

This campaign crudely linked cleanliness – long associated with being ‘civilised’ – with the civilising mission. Colonised people, suggested Pears, could be made European by a bath with Pears soap. In the first volume of Capital (1867), Karl Marx began to develop the idea of ‘commodity fetishism’ to explain the kind of ‘magical’ attraction and meaning which commodities – ordinary, manufactured objects – seem to exude. He argued that a range of meanings – which are socially and culturally inflected and which change over time – are attached to commodities. Capitalism encourages people to confuse the utility of the object and social meanings – this is what Marx called ‘commodity fetishism’. In other words, objects take on meanings to the extent that they assume a kind of independence from their utility. The purpose of soap was no longer to clean bodies and clothes, but, rather, to civilise.

A similar process occurred with the pavlova on MasterChef: it was no longer simply a pudding, but, rather, representative of success and good taste. When one of the contestants in the final round produced what she thought would be a bad pavlova, she collapsed in tears and refused to continue. It was as if it was she – rather than her ability to bake a pudding – who was being tested. When Alice Waters hunted for the perfect melon, she was not only seeking out a fruit, but also an object which embodied what she believed to be her goodness and moral superiority.

I wouldn’t be writing this post if I thought that this strange affliction was limited to Californian chefs and anxious Australians. Look at food magazines and food programmes: aimed at middle-class audiences, they conflate being able to cook well and to eat good – whole, organic, humanely reared – food with being good, successful, and environmentally and socially responsible. I have absolutely nothing against farmers’ markets, artisan bakers, small-scale farmers, co-operative supermarkets, and organic grocers – in fact, I think that they’re helping to create new ways of thinking about food – but I am deeply concerned when their produce is no longer thought of simply as food, but becomes a marker of middle-class morality.

This form of commodity fetishism is limiting: it associates good food with class and wealth. It encourages those who consume this food to think only about the product which they buy, and not to consider the complex processes which brought that piece of cheese or that steak to their deli or supermarket. It also mystifies the production, preparation, and eating of food. If we are to become more careful eaters – and more aware of how our eating habits impact on the world around us – we need to see food as food: as a product which is fundamental to life and which all people have a right to eat.
